ANTIGUA FINCAS BOURBON, SACATEPEQUEZ

Located amongst the ruins, shops and restaurants of downtown La Antigua, Guatemala are three farms producing some very special coffee.Those farms are Finca San Carlos, Finca San Ignacio and Finca Villa Estela. By rotating what plants are harvested each year, rather than stressing the same plants to harvest every year, these coffee shrubs have been fruiting bourbon varietals for 135 years! Shaded by Gravilea trees, these farms have a uniquely long harvest period (November – April) and a particular height management so that instead of stunting the plant’s growth, they bend and grow towards the ground allowing harvesters to reach all the cherries.

This washed coffee is  grown in vocalic soil with pumice at 1500-1700 meters above sea level and patio dried
