JAIME VASQUEZ ROJAS, HUABAL, PERU
This coffee comes from a one-hectare farm in the Jaén province of Cajamarca, Peru. The plot is owned and operated by Jaime Vasquez Rojas, a second generation coffee cultivator whose plants consist entirely of the caturra variety. Jaime manages the farm without any chemical fertilizer, herbicide, or pesticide applications, and takes close care of the soil quality. The result is a delightfully bright and smooth cup of coffee.
The Huabal district has idealistic conditions for cultivating coffee plants. Grown at 1,950 meters above sea level, this coffee is fermented for 30 to 40 hours before being washed. It’s then placed on tarpaulin mats to dry for 7 to 10 days, depending on weather conditions.
