YONER CELIS GUERRERO, SAN JOSE DE LOURDES, PERU
This coffee is from the village of El Diamante in San Jose de Lourdes, Cajamarca, Peru—1,800 meters above sea level. Yoner Celis Guerrero, who lives in El Diamante, grows mostly Caturra variety on his 3-hectare coffee farm, and recent years started planting Catuai and Castillo varieties as well. Yoner picks the cherries himself along with some family members and a few hired workers. They’re as selective as possible when picking.
The coffee cherries are then transported to Mr. Guerrero’s small wet mill, where it’s pulped the same day in the evening and fermented between 24 to 36 hours. It’s then washed and placed on a lined patio to dry for around 10 days.
