FINCA SAN CARLOS, CHIAPAS, MEXICO
Grown in the southernmost region of Mexico, this decaf coffee is from Finca San Carlos in Chiapas. The beans are curated on lots selected for cup profile, physical preparation, and potential to express excellently once decaffeinated. This coffee is made decaf using the Swiss Water Process, ensuring the preservation of great quality without the use of chemicals.
This coffee consists of the Jade Centennial variety and is grown in clay mineral soil from 1100 to 1350 meters above sea level. The beans are fully washed, fermented underwater for 48 hours before being soaked in spring water for another 48 hours, and are finally dried in the sun on patios and raised beds.
