Grown sustainably with agroforestry farming at altitudes from 1,320 to 1,600 meters, this coffee consists of Cattura, Catuaí, and Bourbon varietals. It’s wash-processed on the farm’s wet mill and then dried on their drying patio over a 35-45 hour period.
Finca Pachuj is a coffee farm located in the Atitlán region of Guatemala, near Volcan Tolimán. Pachuj is a Kaqchikel word meaning “where the mist meets the forest”, and this extra humid and cloudier climate calls for unique tree spacing and shade management. Andres Fahsen—who’s family has produced on this farm for five generations—has refined this balance, resulting in renowned coffee.
